Indian Pulao

Nawabi Pulao is an Indian spicy food very much popular during Ramzan. Here is the recipe for making the Pulao.

  • 1/2 kg chicken
  • 1/4 kg mutton
  • 1 cup curd
  • 1 cup milk
  • 1/2 kg rice
  • 2 eggs
  • 3 onions
  • 1/2 cup shelled green peas
  • 1 pod garlic
  • 1 ginger
  • Rose essence
  • Oil for frying
  • Salt to taste

  1. Wash rice thoroughly for a minute or 2 and soak it in water for 15 minutes. Cook the rice with salt and water.Clean and cut the mutton and joint chicken.Chop the onions. Boil the eggs and keep it aside.Grind ginger and garlic till it turns into a smooth paste.
  2. Heat ghee in a frying pan. Add other ingredients like onions, ginger, garlic paste, and fry well. Add mutton pieces and chicken and fry them for a few minutes. Add 3 cups of water and salt and cook on a low flame until the meat is tender. Add 1 teaspoon of rose essence.(for good flavor)
  3. Take a heavy bottomed vessel(or any vessel of that type) and arrange, alternate layers of rice and cooked meat, making sure that the last layer is rice. Place it in an oven and cook until the rice grains are separate. Serve garnished, with peas,eggs and onions.
